Download ImageIngredients2 tbsp olive oil1 cup vermicelli2 cups rice1.5 tsp salt4 cups of waterStepsRinse the rice until the water runs clear (don’t skip this step).In a big pot, heat the olive oil on medium heat.Once hot, add the vermicelli and keep stirring until they turn golden brown (don’t step away as they tend to cook very quickly).Add the rinsed rice, salt and water. Stir and bring to a boil. Cover the pot and bring to low heat for 10 minutes.Once done, remove the pot from the heat, keeping the cover on and leave for another 10 minutes.Fluff the rice with a fork and serve with toasted nuts (pine nuts, almonds, pistachios…) and chopped parsley.
