Watch Video Lamb Grillers & Veg Tray Bake Ingredients 2kg lamb grillers/forequarters, fat trimmed3 large potatoes, cut into discs250g mushrooms cut in half2 cups frozen peas & corn2 large tomatoes, cut into discs or cherry truss tomatoeswhole head of garlic (optional)approx 5 teaspoons gheedrizzle of olive oilsalt, ground black & white pepper Method Pre heat oven 2200c.Season your lamb with salt and the peppers (I’m generous with the pepper in this dish)Place lamb in your pan/tray and add a foil lid, bake for 20mins.Add salt and olive oil to your potatoes and air fry them for 15-20mins they DONT need to be cooked all the way just a half fry (you could also deep fry) set aside.Once the 20mins is up on the lamb remove from the oven and drain all the liquid fat from the pan. (See pic 3)Now it’s time to layer, first add the potatoes, head of garlic top cut, mushrooms, peas & corn make sure to season peas & corn with S&P first, add tomatoes, drizzle of olive oil and the ghee.Cover with foil and bake for 30mins at 2200c. Then lower heat to 1500c, remove foil and continue to bake uncovered now depending on the thickness of the lamb it can be 11⁄2 hours to 2 hours.Enjoy! Source : www.instagram.com
