Download ImageChicken Marinade Ingredients2 medium chicken breasts1 1/2 tbsp honey1 1/2 tbsp dijon mustard1 tbsp olive oil1 garlic clove gratedSalt and pepperSteps to marinadePlace all ingredients in a small bowl and mix well.Pour over the chicken and marinate in fridge around 10-15 minutes if possible.Place in a preheated oven on 200 degrees for 35-40 minutes or until the chicken is fully cooked.Let cool 10 minutes before you cut in strips.Pour the sauce over for a nice glaze and extra flavor.Lemon Orzo (4 Servings)1 lemon for juice and zest1 cup orzo2 1/2 cups vegetable brothHandful of roughly chopped fresh spinachSalt and pepperDried oregano, dried thyme1 tbsp olive oil(Optional to add at the end for extra creaminess: 1 tbsp heavy cream and 1/2 cup parmesan)StepsHeat the olive oil in a large skillet on medium heat and mix in the orzo tossing to coat completely.Let cook a few minutes on medium high until the orzo is toasted and slightly browned (stirring frequently).Add in broth, dried herbs, lemon zest and mix. Bring to a boil, cover and simmer around 13-15 minutes or until the orzo is cooked.Once done, lower heat and mix in the spinach, half lemon juice, salt and pepper and stir for a couple minutes then remove from heat (if using cream and parmesan, add now too).Serve warm with chicken, chopped parsley and more parmesan.
