Add in all your veggies except the corn and let cook for a few minutes.Scoop your veggie mix to the side and add minced beef, all the seasoning and balsamic vinegar.Once beef is cooked through, stir in the corn, tomatoes and the tomato paste.Mix well and let simmer for a few minutes. In the meantime, slice the potatoes into thin discs.In an oven dish, pour the veggie and meat mixture, top with the potatoes.Make sure they overlap but not entirely.Brush the potatoes with olive oil and sprinkle S&P.Place in a preheated oven on 200 degrees for 30 min or until the potatoes are golden and crispy.Let cool for a few minutes before serving.
