Creamy Red Lentil Soup

Ingredients

2 cups red lentils1 onion chopped in 4 chunks1 big zucchini (or 2 small) chopped in4 chunksAround 1/4 cup frozen peas (optional)S&P to tasteGenerous sprinkles of paprika and oreganoEVOO

Steps

Add All The Ingredients In A Pot On Medium Heat (Except Evoo).Add 4 Cups Of Water Or Just Enough To Cover Everything.Bring To A Boil Then Cover And Simmer Around 30 Minutes Or Until The Veggies Are Cooked Through And Soft.Add Around 2 Tbsp Olive Oil, And Puree With A Hand Blender Until Smooth.Adjust S&p To Taste And Serve Warm!

For The Parmesan Crusted Tidbit Toasts

In a small bowl, mix olive oil, parmesan and oregano.Cut bread in squares and lightly dip them in the mixture.Place in oven on 200 degrees 5 to 10 minutes or until golden and crispy.Add to the soup just before serving.
