Download ImageCheese Fondue (Without Alcohol) Ingredients1 tsp extra virgin olive oil (mine is flavoured with truffle)1 tbsp garlic (minced)2 cups chicken or vegetable stock1/8 tsp lemon juice1/4 tsp freshly ground black pepper1/4 tsp paprika1/4 tsp nutmeg4 cups good quality Swiss cheese (mixture of emmental, gruyere, raclette, etc. & grated)2 tbsp cornstarchDippersbroccoli florets (blanched)cauliflower florets (blanched)mushrooms (baked)potatoes (baked)croutonspickles of choice (gherkin, jalapeno, garlic, etc)olivesStepsIn a medium saucepan or pot, heat olive oil on medium heat.When hot, add garlic & cook for 1 min or till fragrant (do not let it become too brown)Add stock & bring it to a boil.Add the rest of the ingredients (except cheese & cornstarch), bring to a boil & lower heat to medium low.Add cornstarch to the bowl with grated cheese & mix well to coat every strand.Add coated cheese (1 cup at a time) & stir in a figure of 8 after every addition.Taste to adjust seasoning (add salt if needed) & transfer to a fondue pot.Serve cheese fondue with dippers of choice.*I cooked my cheese sauce on the stove top & transfered it onto my hotplate on the dining table (set at the lowest temperature)* For non vegetarian dippers, you can serve cold cuts, sausages, cubed ham, leftover roast meat, etc. Source : www.instagram.com
