Download ImageBbq Chicken Pizza IngredientsDough320 ml warm water7 g instant yeast13 g sugar5 g salt30 ml olive oil500 g AP flour (plus more for dusting hands & work surface)BBQ Sauce2 cups ketchup1/2 cup apple cider vinegar2 tbsp brown sugar1 tbsp Worcestershire sauce2 tbsp hot sauce1 tsp liquid smoke1/2 tsp salt1/4 tsp ground black pepperToppings4 cups chicken (cooked & shredded)2 cups BBQ sauce (homemade or bottled)2 cups mozzarella (grated)1/2 cup onion (diced)1/2 cup corn kernels (optional)1 tbsp red chillies (sliced, optional)1 tbsp cilantro or parsley (chopped, optional)StepsWhisk water, yeast & sugar in bowl of a stand mixer fitted with a dough hook, cover & set aside for 5 mins.Add olive oil, salt & flour, beat on low speed for 5 mins, until dough comes together & when poked, slowly bounces back (if not, continue kneading)Move dough to one side of bowl, lightly grease with olive oil & turn dough around to coat all sides.Cover & allow to rise at room temp for 1-2 hrs or until it doubles in size.Combine ingredients for BBQ sauce in a small pot over low heat, simmer for 15 mins, taste to adjust seasoning & set aside.Preheat oven to 240C, lightly grease baking sheet or pizza pan with olive oil & sprinkle lightly with cornmeal.When dough is ready, punch down to release air bubbles, divide in 1/2, transfer onto lightly floured surface & using lightly floured hands, gently flatten into a disc, place on prepared pan, stretch & flatten into a 12 inch circle (I simply made 1 huge pizza rectangle)Brush surface with olive oil, use fingers to make dents, arrange toppings, bake for 12-15 mins, slice & serve immediately.
