Add the egg yolk and vanilla and mix again. Stir in all the dry ingredients except chocolate chips and mix just until there are no dry spots left (don’t over mix). Add the chocolate chips and give it a quick stir. Place the bowl in the fridge for 30 min (or in the freezer for 10 min), while the oven preheats at 180C. Line a baking tray with parchment paper and scoop even amounts of dough with a spoon or ice cream scooper onto the tray.
