Mix 5g grounded flaxseed, 1g baking powder, and 20g water2. Let them sit for 15 mins3. Mix yeast and water, let sit for 15 mins4. Mix protein powder, wheat gluten, bread flour, okara flour, and pinch of salt together5. Combine flaxegg, yeast water and floursssss together6. Form a dough and place in a greased bowl7. Wait for 20-30 mins for the dough to rise a bit8. Meanwhile, cut the apples into thin slices and place them on a microwave-safe plate9. Add in lemon juice and some water into the plate and microwave those apples for around 2 mins until soften10. Then slightly dry them out with Kitchen paper11. Preheat the oven at 180 (upper) and 200 (lower)12. Separate the dough in 313. Flour the surface and roll one dough as a long triangle14. Brush a bit of water on top and sprinkle the cinnamon and sugar mix15. Add apples on top and fold like the 3rd photo16. Roll one of the roll up and repeat the previous 3 steps17. Connect the dough by head to end (not sure how to explain but u know) and roll 2 rolls into 118. Roll 3 of them up19. Bake for ard 22-25 mins, let cool and serve with cream cheese or yogurt on topP.S. I have tried so many different version and came out with this. Might not be the best taste but probably one of the best macros’ rolls. If you want it to be more like a bread, substitute more protein powder and okara powder with bread flour.
