Meanwhile, cook the pasta in salted and boiling water.While the pasta cooks, mix the dressing ingredients in a bowl, whisking for a minute until well combined.Drain the cooked pasta from all the water and place them in a big bowl.Toss immediately with the dressing while still warm.Let cool then mix in all the salad ingredients including the cooked eggplants.Add more crumbled feta on top and serve warm or chilled.
