Valentine’s Banana Pasta

Ingredients

1 box (3 cups dry) Solely Banana Pasta2 tablespoons olive oil1 tablespoons red wine vinegar1 teaspoons fine sea salt1⁄2 teaspoon black pepper2 cups chopped red cabbage, chopped1 medium red bell pepper, chopped1⁄2 cup rainbow radishes, diced1⁄4 cup beet sauerkraut

Directions

Fill a medium pot about two-thirds full with water and bring to a boil. When boiling, add the Solely Banana Pasta and boil until soft, 4-6 minutes.Strain pasta in a colander and set aside.Add the banana pasta to a mixing bowl, or a heart shaped cake pan. Add the olive oil, red wine vinegar vinegar, sea salt, and black pepper. Stir well.Add the chopped red cabbage, chopped red bell pepper, diced rainbow radish, and beet sauerkraut and mix well again.Serve between 3.Store any leftovers in the fridge in an airtight container for up to 5 days.Enjoy!
