Watch Video Ingredients 3 eggs ( whites & yolks separated )115g of sugar300mls thickened cream450g mascarpone cheeseCoffee mixed with water (for dipping )Lady fingers biscuits (can get from Coles)Coco powder for dustingChocolate shavings for garnishing Instructions- First boil Water In a pot on the stove and place a glass bowl on top of the boiling water to create a double boiler.In the glass bowl add the egg yolks and sugar and whisk till sugar has dissolved and mixture is creamy.Take off the stove and add in thickened cream and whisk till combined well and then add half of the mascarpone cheese and whisk till combined then add the rest of the mascarpone cheese and whisk till all thick and creamy.In a separate bowl, using a electrical whisk, whisk the egg whites till fluffy and thick.Pour the mascarpone cheese mixture into the egg whites and fold all together gently till combined well. Assemble Dip ladyfingers very quickly (less than a second) into the coffee water and line them in one layer in an baking dish/ serving dish .If necessary, break a few ladyfingers to fit them in the dish.Spoon half of the cream cheese filling over the ladyfingers and smooth the top. Repeat with a second layer of coffee-dipped ladyfingers, then with the rest of the cream.Dust with coco powder and chocolate shavings or you can do it just before serving.Cover and refrigerate for at least 8 hours or up to 2 days.
