Sushi Bundt Cake

Sushi Rice Ingredients

4 cups Sushi Rice4 cups water1/2-3/4 cup Rice Vinegar or to tasteBlack sesame seeds4 Tbs granulated sugar

Directions

Dissolve sugar in rice vinegar. Rinse rice until water is clear. Add water to pan. Soak 30 minutes. Bring to boil. Cover, simmer 15 minutes, remove from heat, let stand 10 minutes. Add sugar/vinegar & sesame seeds. Cool.

Salmon & Tuna Ceviche

8 oz filet salmon8 oz filet sushi1⁄3 cup chopped cilantro2 scallions, thinly sliced

Marinade

2 Tbs orange juice2 Tbs Tamarind2 Tbs lime juice2 Tbs honey2 tsp toasted sesame oil2-3 tsp Siracha4 Tbs Mayo

For Layering

1 lg Japanese cucumber or 2 regularFurikake(Japanese nori flakes, available at Whole Foods or online)1 jalapeño1 lg Florida or 2 Hass avocados

Directions

1. Freeze fish 15 minutes to slice easier. Cut into 3⁄4 inch cubes.2. Mix all marinade ingredients, toss in fish & cilantro3. Grease Bundt pan. Place half of rice in bottom and press in.4. Arrange the cucumbers over the rice5. Drain excess liquid from the fish. Place the fish evenly over the cucumbers.6. Top with avocado slices. 6. Top with rice. Press rice down firmly7. Use a small spatula to loosen the rice around the edges before inverting.8. Place plate on top of Bundt pan. Invert. 9. Decorate with jalapeño slices & sprinkle with more sesame seeds and Furikake.
