Download ImageIngredients500 g dried pasta of choice3 tbsp olive oil7 cloves garlic700 g large prawns (shell on & deveined)500g or 3 medium tomatoes (finely chopped)1 cup reserved pasta water2-4 fresh red chillies (thinly sliced)1/2 tsp salt (to taste)1/8 tsp ground black pepper1/2 tsp chilli flakes (optional)1 cup parsley (chopped)StepsBring a large pot of water to a boil, salt generously, cook pasta according to the instructions on the packaging till al dente, drain (reserve pasta water) & set aside.While boiling the pasta, heat a large pan on medium high & add oil.Add prawns, cook for 2 mins until they turn opaque & shells turn pink, remove & set aside.To the same oil used earlier, add garlic & saute till fragrant.Add chillies, saute for 1 min then add tomatoes.Cook tomatoes for 2 mins until they start to break down slightly, then add prawns, salt, pepper & chilli flakes (if using) & toss for 1 min.Add pasta, reserved pasta water & parsley, toss till well combined, taste to adjust seasoning & remove from heat.Transfer pasta into serving plates, sprinkle more chopped parsley & chilli flakes (optional) & serve immediately.
