Download ImageSpiced Fig Coffee Cake Ingredients120 g butter (softened)80 g granulated sugar200 g AP flour100 g oat flour (blend rolled oats till finely ground)10 g baking powder1 tsp cinnamon powder1/2 tsp salt2 large eggs (or applesauce)1 tsp vanilla extract1/2 tsp almond extract (optional)240 g plain yogurt (or vegan yoghurt/coconut cream)2 cups figs (fresh or dried, chopped)Streusel80 g AP flour100 g rolled oats50 g brown sugar1/4 tsp salt70 g butter (cold & cubed)1/2 cup figs (fresh or dried, chopped)StepsPreheat oven to 170 deg C.Lightly grease & flour a 9 inch baking pan.In a bowl, combine AP & oat flour, baking & cinnamon powder & salt, mix well.In the bowl of a stand mixer fitted with the paddle attachment, beat butter & sugar at medium speed for 5 mins (scrape sides occasionally)Add eggs, one at a time (beating well after each addition), add vanilla & almond extracts.Reduce speed to low, add 1/3 flour mixture alternately with yogurt, beating just until combined after each addition.Gently fold in figs & transfer batter into prepared pan.For the streusel, combine ingredients (except figs) in bowl, mix with your fingers for abt 5 mins until mixture is crumbly (coarse not fine)Stir in figs & sprinkle over the cake batter.Bake cake for 40 to 50 mins, until it turns golden brown & a pick inserted in center comes out clean.Let cool in pan for 20 mins then serve warm or at room temp with more figs & ice cream of choice (optional) Source : www.instagram.com
