Download ImageIngredientsChocolate:1 cup stevia-sweetened chocolate chipsSalted Caramel:4 ounces butter1 cup heavy whipping cream2 tablespoons plain cream cheese2 tablespoons erythritol½ teaspoon pure vanilla extract1 teaspoon caramel extract1 teaspoon sea saltGarnish2 tablespoons stevia-sweetened chocolate chips, meltedSea saltInstructionsLine a muffin tin with 9 silicone muffin liners.Using a double broiler, or a glass bowl set over a small saucepan, carefully melt chocolate chips, or microwave in a glass bowl on 30-second intervals, stirring in between intervals.Place 1 tablespoon of the melted chocolate mixture into each lined muffin cup and with your finger or the back of a spoon, spread upwards in the silicone liner so that you create a thin side crust on each cup.Freeze for at least 10 minutes.While chocolate is freezing, add all of the salted caramel ingredients to a saucepan set to low heat and simmer until it is thick and bubbly, about 10 minutes.Fill each chocolate cup with the salted caramel filling and flatten with a back of a spoon.Freeze for at least 10 minutes.Remove from the freezer and garnish with optional melted chocolate and sea salt, freezing for 10 more minutes.Store in a glass container in the fridge for 1-2 weeks.Enjoy!
