Download ImageIngredients4 cups leek (sliced, washed thoroughly & drained)2 cups extra coarse bulgur3 tbsp olive oil1 large onion (finely diced)2 cloves garlic (minced)2 tbsp tomato paste3 cups vegetable stock or water1 tsp salt (to taste)1/2 tsp chilli flakes (to taste)1/2 tsp ground black pepper (to taste)2 tbsp scallions (sliced)1 large tomato (sliced)1/2 small lemon (quartered)StepsHeat oil in a large pan on medium high.Add onion & garlic, cook till onion turns translucent.Add leek, cook for 5-8 mins till they start to become soft.Add tomato paste, cook for 1 min & add bulgur.Stir for 1 min, add salt, chilli flakes, pepper & stock.Cover pan, bring to a boil, lower heat & cook for 10 mins or until water has been absorbed by the bulgur.Remove from heat & set aside for 5 mins (covered)Fluff grains with a fork, taste to adjust seasoning then ladle into individual serving plates/bowls.Garnish with scallions, sliced tomatoes, sprinkle more chilli flakes (optional) & serve with lemon wedges.
