Download ImageNarlı Bulgur Salatası (Pomegranate Bulgur Salad) Ingredients1 cup fine bulgur1/2 tsp salt (to taste)1/4 tsp ground black pepper (to taste)1&1/2 cups hot boiling water2 tbsp tomato paste1 tbsp olive oil2 tbsp pomegranate sauce (nar ekşisi)1/4 tsp red chilli flakes (to taste)1/2 tsp ground sumac2 tbsp spring onion (finely chopped)2 tbsp parsley (finely chopped)1 cup pomegranate seedsStepsAdd bulgur, salt & pepper into a big bowl, mix well to combine.In a smaller bowl, add hot water & tomato paste together, stir well to combine then add into the bowl with bulgur.Cover immediately with cling wrap & set aside for 10 mins.When water has been absorbed by the bulgur, add olive oil, pomegranate sauce, chilli flakes & sumac.Fluff with a fork for 2 mins to separate grains & cool it down slightly.Add spring onion, parsley & half the pomegranate seeds, continue to mix with a fork & taste to adjust seasoning.Transfer to a serving bowl/plate, sprinkle remaining pomegranate seeds & more chopped herbs (optional)Serve at room temperature or chilled.
