Download ImageWatch Video Ingredients180g raw cauliflower55g unsweetened apple purée/ banana/ egg (adjust the amount of liquid and sweetners)30g salted caramel soy protein isolate @myvegan15g cacao powder1.5g xanthan gum/ flaxmeal (optional; u can neglect this if u r using egg)70-75g water/ milkA pinch of salt5 drops of mocha flavour drops @myproteinhk (optional)5g chocolate chips (or more)5g lemon juice/ vinegar0.5g baking soda2g baking powderMethod1. Steam/ boil cauliflower and blend2. Add protein powder, apple purée, cacao powder, salt, 50g liquid to blend until smooth3. Add xanthan gum, baking soda n powder, 20g more water, and more sweetener if needed4. Blend everything again5. Preheat oven to 1906. Pour batter into baking tray and add choc chips7. Bake for 30-35 mins (I’ve baked mine for 28 mins but I feel like it may take more time)8. Let cool and get brownie out form baking trayNotes1. This brownie is so moist and fudgy which I liked a lot! For those who love to have a harder or cake-y texture, u may try to bake for a longer time (I guess u can bake up to 45 minutes)! You may also add more flour or decrease the amount of liquid from my recipe2. For the taste: I can’t taste cauliflower tbh I guess cauliflower is just pretty tasteless¿ huhh Anywaysss, I bet u can also adjust the amount of water and make brownie with beans (like my previous molten mug cake)3. I would suggest u to eat it warm/ perhaps room temperature instead of after refrigerated (I guess u may taste a bit of cauliflower if refrigerated overnight)4. If u don’t want to use protein powder, feel free to use AP/ chickpea/ oat/ whole wheat flour5. You may wish to air fry them as well Buttt make sure to preheat air fryer first and it may take shorter time if using air fryer6. Feel free to add in nuts/ cacao nibs/ marshmallows!
