Watch Video Homemade Potato Gnocchi Ingredients 1 .2 kilos white washed potatoes4 eggs5 cups white flour (keep the 5th cup for kneading , rolling )2 tbs salt600ml thickened cream @bullafamilydairy2 tbs butter4 cloves crushed garlic2 cups grated Parmesan cheese @perfect_italianoau any type will do .2 tsp powdered chicken stock @massel_australia(If the mixture is too sticky you will need more flour so keep flour near by ) Steps Peel , chop potatoes and boil until aldente(cooked but not too soft ) boil a max of 12 mins …Mash potatoes (I use a potato ricer ) and wait until they have cooled down a little and add the 4 cups of flour , form a well and in the middle add the 4 eggs and salt . Using a sifter for the flour will prevent lumps from forming .Using a fork mix ingredients together slowly until all the ingredients form a dough like shape .If it’s too wet add a little flour as u go.Using the extra cup of flour as your aid make a round ball , using sharp knife cut into 4 quarters , then cut the quarters into half again , rolll out tube like form with the dough and then cut into small bit size peices .Use as much flour as u need to make it easy to work with .Freeze the gnocchi on a tray with baking paper until your ready to cook . This will help them harden up and keep shape.Boil water in a pot and wait till it comes to a boil , fry off butter and garlic in another pot and add thickened cream and chicken stock and Parmesan cheese .Drop in the gnocchi in boiling water and when it rises it’s ready , scoop out into the sauce and simmer for few mins.DO NOT OVERCOOK they will go rubberyTaste for salt to your own taste .Garnish with fresh or dry chives .
