Download ImageIngredients500 G Udon Noodles (Boiled According To Instructions On Packaging &Amp; Divided Into 4 Portions)Curry Ingredients3 tbsp butter (divided)2 large onions (sliced)1 tbsp tomato paste1/2 inch ginger (grated)1 apple (grated)2 tbsp AP flour3 tbsp curry powder1 tbsp garam masala powder1 tbsp chilli powder (optional)1 lt chicken stock1 tbsp honey2 tbsp Worcestershire sauce2 tbsp dark soy sauce1 tsp salt (to taste)1/2 tsp ground black pepperVegetables (Cut Into Roughly The Same Size)2 medium potatoes1 large carrot1/2 small daikon1 medium red bell pepper1 medium green bell pepperStepsHeat a large pot on low & add 1 tbsp butter.When melted, add onions & cook for 20 mins till they are soft & caramelised.Add tomato paste, ginger & apple, cook for 2 more mins, remove & set aside.Into the same pot used earlier, increase heat to medium high, add the remaining butter, when it has melted, add flour.Combine with a whisk, cook for 5 mins, add curry, garam masala & chilli powder (if using), continue whisking for 2 mins.Add the caramelised onions back in, along with the rest of the ingredients.Use an immersion blender to process into a smooth puree.Lower heat to medium, add potatoes, simmer for 10 mins, add carrots & daikon, simmer for 5 mins.Add bell peppers, cook for 2 mins, taste to adjust seasoning & continue cooking till vegetables are cooked to desired doneness.Placed boiled udon into serving bowls, ladle enough curry sauce & vegetables, garnish with boiled egg & chopped spring onions (optional), serve immediately.
