Download ImageCrispy Baked Cheesy Polenta Fries Ingredients1 cup milk of choice (dairy or plant based)2 cups chicken or vegetable stock1 tbsp butter1&3/4 cup quick cooking polenta3 tbsp parmesan cheese (freshly grated, plus more for garnishing)2 tbsp parsley or any other herb of choice (chopped, plus more for garnishing)1/2 tsp salt1/4 tsp ground black pepper1/4 tsp chilli flakes (optional)4 tbsp olive oil (divided)StepsIn a saucepan or pot, combine milk, stock & butter, heat on medium high & bring to a rolling boil.Slowly whisk in polenta, reduce heat to medium low, continue cooking & stirring until polenta pulls from the edges (abt 3-5 mins)Add cheese, parsley, salt, pepper & chilli flakes (if using), stir well then remove from heat.Brush heatproof container to be used to chill polenta with 1 tbsp olive oil.Transfer polenta into greased heatproof container, gently press to spread it evenly, cover with cling film & refrigerate for 3 hrs.When ready to bake, preheat oven to 200 deg C.Transfer chilled polenta to a cutting board, cut into desired sized batons & arrange on a lined baking tray.Brush polenta sticks with remaining olive oil & bake for 30-45 mins till fries turn golden brown.Transfer baked polenta onto a serving plate, garnish with chopped parsley & grated parmesan (optional) & serve with preferred dipping sauce or own its own.
