Coconut Tapioca Pudding is a dessert that originated in Southeast Asia and is made from tapioca pearls, coconut milk, and sugar. Ingredients

3 cups of coconut milk1 cup of tapioca pearls (washed and soaked in 2 cups of water)1 and 2/3 cups of white sugarfresh mango, to tastedesiccated coconut, to taste

Method

1. Rinse the tapioca pearls until the water runs clear then soak it in water for about 10 minutes2. To a saucepan, add the coconut milk3. Once the milk is warm, add the tapioca pearls and mix4. Once the coconut milk starts bubbling, add the sugar and mix well until the sugar dissolves5. Turn the heat off and let the pudding cool6. Add the pudding to a glass and top with fresh mango and desiccated coconut7. Enjoy!
