Add popcorn into a big microwave-save bowl and cover with a plate2. Microwave popcorn on high for around 6-7 minutes (depending on ur microwave) – see notes3. Mix protein powder, water, pb2 & syrup in another bowl – see notes4. Mix syrup with cooked popcorn5. Freeze popcorn in freezer for 5 mins so it won’t be so sticky6. Get popcorn out and shape them into bars with plastic food wrap7. Place them on a plate (u can place a parchment paper on the plate first to avoid sticking)8. Microwave chocolate chips and coconut oil for 30 seconds (make sure not to burn them!!!!)9. Spread chocolate on top of popcorn bars and refrigerate them for at least 2.5 hours/ freeze for 30-45 mins until solidNotes1. u can also cook popcorn on stovetop2. Do not over cook popcorn or else they will burn – some kernel may not pop and that’s normal – u can get those popped popcorn out and microwave remaining kernels for another 1-2 mins3. 1/4 cup of kernels will make approximately 7 cups of popcorn4. I feel like i may hv add too much liquid as the popcorn get soggy immediately – so u may reduce the amount of liquid/ pop more kernels5. You can freeze them for a longer time if u like harder bars6.
