Blueberry Cheesecake Bars are a delicious dessert that combines a buttery graham cracker crust, creamy cheesecake filling, and a sweet blueberry topping.

To make the crust, graham cracker crumbs are mixed with melted butter and pressed into a baking dish. The cheesecake filling is made with cream cheese, sugar, vanilla extract, and eggs, which are beaten together until smooth and creamy. The mixture is then poured over the crust and baked until set.

For the blueberry topping, fresh or frozen blueberries are cooked down with sugar and lemon juice until they thicken and become jam-like. This mixture is spread over the cooled cheesecake and chilled until set.

The result is a delicious and visually appealing dessert that is perfect for any occasion.

Ingredients

Base:1 pack choc chip cookies @henrobiscuits3 Tblsp melted butterFilling :250g cream cheese1⁄2 cup whipping cream @sbakels1⁄3 cup icing sugarFew drops blueberry essence

Method

In a food processor process the chop chip cookies @henrobiscuits till you have fine crumbs. Add the melted butter and process till everything is combined. Press evenly in a small rectangle tray lined with baking paper @supamama_sa Then set aside.In a seperate bowl whip the cream to stiff peaks. Whisk together the cream cheese and icing sugar using a had held whisk (this will make it easy to mix in to the whipped cream). Slowly fold in the cream cheese and whipped cream with blueberry essence just until well combined. Spread this mixture evenly over the prepared biscuit base.Freeze overnight. Or chill in the fridge.Note: I find freezing is better that way you get a clean cut. Let it come to room temperature if you don’t like to serve it frozen.Decorate as desired.
