Download ImageAsam Pedas Ayam (Sour & Spicy Indonesia Chicken Stew) IngredientsSpice Paste :4 tbsp dried red chillies (rehydrated in hot water & sliced)8 shallots (or 1 cup onion)5 cloves garlic1 inch ginger1/2 tsp turmeric powder2 tbsp oilStew1 kg chicken pieces (bone in)1 lemongrass (white part only, smashed lightly)1 cup tamarind juice (1 tbsp diluted in water)2 cups water1 tsp salt (to taste)1/2 tsp ground black pepper (to taste)2 cups okra or eggplant (cut into desired size)2 tbsp daun kesum (Vietnamese cilantro, optional)StepsAdd all ingredients for the spice paste into a blender or food processor & pulse till a smooth paste forms (add water if necessary)Heat a pot on medium high, add lemongrass & spice paste, fry for 5 mins till oil starts to separate.Add chicken, stir well & cook till chicken is no longer pink.Add tamarind juice, water, salt & pepper, stir well & bring to a boil.Add vegetables of choice, daun kesum & cook for 5 mins.Taste to adjust seasoning & continue cooking till gravy reaches desired consistency.Serve with rice & condiments of choice.
