Download ImageVegetable Massaman Curry Paste Ingredients2 cardamom1 inch cinnamon stick3 cloves1/2 tbsp coriander seeds1 tsp cumin seeds3 dried chillies1 cm galangal (or ginger 1/8 tsp lemon juice)7 cloves garlic1 tbsp lemongrass (white parts only)1/2 tsp white peppercorns1/2 tbsp salt2 shallots (or 1/2 medium onion)1/2 tsp shrimp paste1/2 nutmeg (grated)Steps To Make Curry PasteDry roast garlic & shallots (skin on) on a low flame for 5 mins, add chillies & lemongrass, roast for 2 mins.Peel off skins when cooled, combine with other ingredients in a blender or mortar & pestle, process till smooth.Gravy1 tbsp oil3-4 tbsp curry paste2 cups coconut milk1 medium yellow onion (sliced)1 tsp salt1 tsp fish sauce2 cups cauliflower florets1 cup red & green bell peppers1 cup carrot (chopped)1 cup broccoli floretsSteps To MakeHeat oil in a wok or pan on medium high.Add curry paste & saute for 1 min.Add coconut milk & mix well.Add vegetables (except broccoli) & salt, bring to a boil, lower heat to medium & cook for 10 mins.Add broccoli & fish sauce, cook for 5 mins.Taste to adjust seasoning, garnish with chopped fresh herbs plus sliced chillies (optional) & serve with rice.
