Download ImageRed Bean Mochi Ingredients40g GFR (glutinous rice flour)1/2 tbsp sugar60ml water60g red bean paste (i made my own, but u can also use store bought ones)Steps1 in a bowl, combine all the ingredients and stir till well combined2 cover with cling wrap (poke few holes) and microwave on high for 1 min Stir and microwave for another minute3 set it aside to cool, and while waiting divide red bean paste into 4 balls (around 15g each) and chill in fridge4 once mochi is cool, transfer to a working surface floured with GFR Knead and divide into 4 pieces Roll it out and place read bean paste in the center and pinch the edges to seal Roll into a ball and chill in the fridgeVegan Matcha Cookies Ingredientswet40g vegan butter (room temp)25g white sugar30g brown sugar1 tbsp plant milk1/2 tsp vanilla extractdry85g all-purpose flour1/4 tsp baking sodapinch of saltSteps1 in a bowl, cream the wet ingredients using a mixer/whisk by hand2 sift the dry ingredients then fold till well combined3 divide the batter into 4 equal portions, flatten it, place the mochi and roll into a ball making sure the mochi is covered completely4 place on a tray and chill in the fridge for at least 30 mins5 in a preheated oven, bake cookies for 18-20mins at 180C or until edges are golden brown Serve while still warm and ENJOY!
