Freeze tuna steaks for 15 minutes. This will make them easier to slice and chop uniformly.2. For the marinade: whisk together the tuna, sesame oil, Tamari, ginger paste, lime, honey and orange juice. Stir in the ginger, cilantro, salt and pepper. Fold in the tuna and refrigerate 1-4 hours, stirring occasionally.3. Cut the carambola. Cut off the star corners, discarding the round center with seeds. Mix the carambola with the cilantro, lime juice, salt and pepper. Refrigerate.4. To serve. Place the chopped avocado on the bottom of serving dish. Top with tuna, then carambola. Sprinkle with chives and sesame seeds.5. If you want to serve like the photo, buy round metal molds online. You can also cut the top and bottom off of a soup can. Press each layer in firmly. Refrigerate 1 hour. Remove mold carefully, lifting it straight up. Decorate with the sesame seeds and chives.
