Download ImageWatch Video Ingredients For Cookies30g chocolate smooth soy protein isolate @myvegan10g black cocoa powder (See notes)10g oat flour (or AP flour)4.5g egg white protein (or egg white – but reduce amount of water// vegan: flax-meal)40g unsweetened apple purée/ banana/ pumpkin purée/ yogurt (but add sweeteners if using yogurt)1g baking sodaPinch of salt35-40g water/ milkFillings45g soy yogurt (better to use thicker yogurt tho like Greek or coconut yogurt)5g maple/ honey/ any sweetener of choice6.5g peanut powder @pb2foods*More Pb2 or use binding agents like guar gum if too wateryMethod1. Mix ingredients for cookies together2. Place them into the fridge for 15 mins (optional – but this will make things easier)3. Separate into 2 doughs4. Use ur hands or use plastic wrap to shape them into 2 equal-size cookies5. Preheat oven at 200/ 190 (fan-forced) for 10 mins6. Bake for 12-15 mins (I’ve baked mine for 15 mins and it’s pretty hard – so if u want to have a softer cookie, bake for ard 12 mins)7. Mix fillings in a bowl8. Let cool the 2 cookies for at least 15 mins9. Add fillings and serveNotes1. Find black cocoa powder from bakery stores. Black cocoa powder has the taste of Oreo while normal cacao powder just doesn’t! However, if u really cannot or are just too lazy to find one, use normal unsweetened cacao powder2. For me, the cookies is all good but I guess for most people, it may not be sweet enough so add sugar/ flavour drops if needed3. If u want it too be more moisture, add coconut oil/ butter/ even peanut butter – just some extra fats – but adjust the amount of liquid4.
