Download ImageRoasted Cabbage Rounds Ingredients1 head of green or purple cabbage (or half of each combo of both)1/4 cup avocado oil2 Tbs. coconut aminos1 tsp. sea salt1/2 tsp. black pepper1 tsp. garlic powder1 tsp. smoked paprika1 tsp. dried caraway seeds1 tsp. dried oregano1 tsp. dried red pepper flakesGarnish2 Tbs. hemp seeds2 Tbs. dried goji berries1/4 cup fresh parsley, choppedInstructionsPREHEAT oven to 400F.SLICE cabbage in 1″ rounds and place on a baking tray lined with parchment paper.DRIZZLE avocado oil and coconut aminos over each round and use your fingers to spread it evenly over each round.SEASON with sea salt, black pepper, garlic powder, caraway seeds and red pepper flakes and place in the oven.ROAST in the oven for 30-35 minutes, or until the cabbage is soft and the edges are browned.REMOVE from the oven and garnish with hemp seeds, goji berries and fresh parsley.Note: if you do not have coconut aminos, use balsamic vinegar and if you don’t have caraway seeds, dried dill is a great substitute, minced dried apricot would replace the goji berries well and cilantro would be good in place of the parsley.
