Popcorn Chicken Ingredients

400 gr chicken tenders, cut into bite size2 tbsp neutral oilOil for deep fryingWater

Marinade

5 Garlic gloves, grated6 small shallots, grated1 tbsp oyster sauce1 tsp salt1/2 tsp pepper1 tsp paprika powder1 tbsp rice vinegar1/2 tbsp Italian dried herbs (optional)

Flour Mixture (Premixed)

250 gr all purpose flour80 gr cornflour1/2 tbsp baking powder2 tsp paprika powder1 1/2 tbsp garlic powder1 1/2 tsp salt1 tsp pepper powder

Steps

1. Combine chicken with marinade ingredients and set aside for 30 mins, then mix with 2 tbsp of oil2. Transfer chicken into the flour mixture and coat evenly3. Soak chicken pieces into water and transfer back to the flour mixture, and massage the chicken to create crackly texture4. Heat generous amounts of oil, fry chicken pieces until golden brown over medium heat in batches
