Watch Video Orange Blossom Semolina Cake Ingredients 21⁄2 cups fine semolina4 large eggs1 cup white sugar2 teaspoons baking powder2 heaped tablespoons plain flour1 teaspoon Cardamon (optional)Pinch of saltZest of 1 or 2 oranges (depending on size)1 cup milk1 cup vegetable oil For The Syrup 11⁄2 cups icing sugar3⁄4 cup water3⁄4 cup fresh orange juice1⁄4 cup honey2 teaspoon orange blossom water Steps Preheat oven to 180C fan forced. Spray and line a cake pan I used a 28cm Tefal Round Tray (Cooking time varies depending on tin size).Whisk together the sugar, eggs and salt till it thickens roughly 4 mins on high speed.Add the cardamon, mix. Add the orange zest, mix.In a large bowl add the semolina and sift in the flour and baking powder, mix. Pour in the egg batter into the dry ingredients bowl and stir to combine.Add the oil and stir till combined then add the milk and stir till all combined.Pour into lined tray and bake 35-45mins or till golden and a skewer comes out clean. My tray took 40mins.Make the syrup by placing all ingredients except the orange blossom into a sauce pan and whisk on med to low heat for approx 5 mins. Turn off heat and add 2 teaspoons orange blossom water, set aside.Once cake is cooked remove from tray and pierce a few holes and pour all the syrup over the cake allow it all to absorb in, set aside minimum 1 hour before serving or make the night before.
