Download ImageFull English Breakfast IngredientsBeans1&1/2 chicken stock1/2 cup water2 tbsp brown sugar2 tbsp tomato paste1/4 cup ketchup3 cloves garlic (smashed)2 sprigs fresh sage3 cups white beans (freshly boiled or canned)1 tbsp corn starch (with 1 tbsp water to make a slurry)1/2 tsp salt (to taste)1/4 tsp ground black pepper (to taste)Tomatoes & Mushrooms2 tbsp butter2 tbsp olive oil2 large tomatoes (cut into half)2 cups mushrooms (sliced)1/4 tsp dried thyme1/4 tsp saltSausage1 tbsp olive oil4 large sausages of choiceEggs2 tbsp butter4 large eggsStepsAdd all ingredients for the beans into a pot (except for beans & cornstarch slurry) on medium high heat, bring to a boil.Reduce heat to low, simmer for 15 mins, add beans, simmer for 15 mins & taste to adjust seasoning.Whisk in cornstarch slurry, until desired consistency is reached.In a large pan over medium high heat, add butter & olive oil.Add halved tomatoes (cut sides down) on one side of pan & mushrooms on the other, cook for 5 mins before flipping or stirring.Sprinkle 1/2 the thyme & salt, cook for 5 mins before flipping & stirring, add remaining thyme & salt & remove when they’ve reached desired doneness.Heat another pan over medium high & add olive oil.Once pan is very hot, add sausages & sear on all sides for 1 min each (5 mins in total) & transfer onto plates.Add 1 tbsp butter into same pan, cook eggs sunny side up, 2 at a time.Arrange components on serving plates & serve.
