Download ImageIngredients1 cup roasted almonds, roughly chopped21⁄4 cups all purpose flour11⁄2 teaspoon baking powder1⁄2 teaspoon salt1⁄2 cup granulated sugar3⁄4 cup brown sugar3 large eggs (room temperature)1⁄2 cup olive oil1 tablespoon pure almond extract1⁄2 teaspoon vanilla extractInstructions1. Preheat oven to 325F2. Mix all dry ingredients in one bowl except almond3. Mix all wet ingredients in another bowl4. Pour the egg mixture into the flour bowl, mix well5. Fold in the chopped almonds6. Use a big spoon and form two logs on parchment paper lined baking tray ( if needed, use wet fingers to shape)7. Bake for 30 minutes and take out the oven to let cool in the tray for 10 minutes8. Remove from baking sheet and transfer to a cutting board.Using a serrated knife, slice cookies at an angle about 1⁄2 – 3⁄4 inch thick9.
