Cut your aubergine in half cutting crisscrosses with a knife2. In a bowl add your miso, olive oil, honey, soy sauce, rice vinegar and sesame oil – mix until we’ll combined3. This next step is optional – I do love having my dishes with a lot of flavour and fragrance so I added 1/2 Tsp of all the seasonings listed above!4. Using a cooking brush or even your hands, coat the inside of the aubergine half with your marinade ensuring the mixture goes into the cross crosses leaving a little leftover5. AirFry at 200C for 8 minutes – using your left over marinade, re-apply on the aubergine6. AirFry at 200c for another 8 minutes7.
