Download ImageChili Sin Carne Ingredients2 tbsp olive oil2 cups onion (diced)5 cloves garlic (minced)2 fresh chillies or jalapeno (minced)1 cup celery (diced)1 tsp cumin powder1 tsp chipotle powder1 tsp chilli or cayenne powder1/2 tsp cinnamon powder1/2 tsp smoked or sweet paprika powder2 cups tomato (diced)2 tbsp tomato paste2 cups pumpkin (cut into 1 cm cubes)2 cups bell peppers (cut into 1 cm cubes)1 cup carrot (cut into 1 cm cubes)2 cups beans of choice (cooked)4 cups vegetable stock or water1 tsp salt (to taste)1/2 tsp ground black pepper (to taste)Garnishavocado (sliced)sour cream or yoghurtcilantro or parsley (chopped)lime wedgesStepsHeat oil in a large pot over medium high.When hot, add onion & garlic, saute until onion turns translucent.Add chillies & celery, cook for 2 mins, add powdered spices & cook for another 2 mins.Add both types of tomatoes & cook for 5 mins.Add the vegetables & beans, stir well, add stock or water, salt, pepper & bring to a boil.Lower heat to medium & simmer for 20 mins.Taste to adjust seasoning & cook until stew has reached desired consistency.Ladle stew onto serving bowls, garnish & serve with carbs of choice.
