Download ImageIngredients8 medium sized ripe tomatoes, halved2 garlic cloves1 medium onion chopped2 tbsp olive oil, divided2 tbsp tomato puréeSmall bunch basil leaves1/2 tsp sugarDried oreganoSalt and pepper(Optional for heat lovers) cayenne pepperStepsPlace foil on a baking tray and add the halved tomatoes and the garlic (skin on).Drizzle 1 tbsp olive oil, season with salt and pepper, and toss to coat.Roast in a preheated oven on 200 degrees for 25 minutes or until you see dark spots on the skin.In the meantime, heat 1 tbsp olive oil on medium heat and cook the onions until soft.Add the sugar and tomato purée, mix and cook for another minute. Turn the heat off.Once the tomatoes are done, remove the skin off garlic (optional, if tomato skin is too thick you can peel them too).Place on top of the onion mix with the basil and seasoning and blend with a hand blender or in a food processor until you get a creamy texture.Serve warm with gnocchi topped with more basil and parmesan, enjoy!
