Download ImageIngredients2 1/2 cups mixed nuts (raw unsalted)1 cup pumpkin seeds (raw)2 tbsp olive oil or butter2 tbsp maple syrup4 sprigs (approx. 2 tbsp) fresh rosemary, finely chopped/snipped1 tbsp thyme1/4 tsp paprika1 1/2 tsp sea salt1/2 tsp fresh ground pepperDirections1. Preheat oven to 325.2. Place nuts pumpkin seeds in a mixing bowl.3. In a separate bowl add the butter or oil, maple syrup, rosemary, thyme paprika. Mix well for a few minutes.4. Pour oil mixture over nuts and mix well. Once mixed, place the nuts evenly on a parchment lined baking sheet. Sprinkle with sea salt fresh ground pepper.5. Bake for 12-15 minutes or until the coating is golden brown. Stir nuts at the half way mark.6. Remove from oven and let completely cool. I like to sprinkle with a little flakey sea salt and garnish with fresh rosemary. You can store the nuts in a jar or air-tight container for up to a month.Tips•you can use any mixture of nuts•you can swap the maple syrup with any other sweeteners – coconut, date or regular sugar.
