Rabdi Badam Kheer is a traditional Indian dessert that combines the richness of rabdi (sweetened condensed milk) and the nuttiness of almonds to create a creamy and flavorful rice pudding. It is a popular sweet dish served during festivals, celebrations, and special occasions.

To make Rabdi Badam Kheer, you will need the following ingredients:

1 liter full-fat milk
1/2 cup basmati rice
1/2 cup almonds, blanched and chopped
1/2 cup sugar (adjust according to your taste)
1/2 teaspoon cardamom powder
A pinch of saffron strands (optional)
Chopped pistachios and almonds for garnishing
Here’s a step-by-step description of how to prepare Rabdi Badam Kheer:

Rinse the basmati rice under running water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.

In a heavy-bottomed pan or a deep saucepan, pour the milk and bring it to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.

Once the milk comes to a boil, reduce the heat to low and add the soaked and drained rice. Cook the rice in the milk, stirring frequently, until it becomes soft and the mixture starts to thicken. This process may take approximately 30-40 minutes.

Add the chopped almonds and continue to cook the kheer for another 5-10 minutes until the rice is fully cooked and the kheer reaches a desired consistency. Stir occasionally to avoid burning.

Add sugar to the kheer and mix well until it dissolves completely. You can adjust the amount of sugar according to your taste preference.

Add cardamom powder and saffron strands (if using) to the kheer. Cardamom enhances the flavor, while saffron adds a beautiful golden color and aroma. Mix everything together and cook for an additional 2-3 minutes.

Remove the kheer from heat and allow it to cool to room temperature. It will thicken further as it cools.

Once cooled, transfer the Rabdi Badam Kheer to a serving bowl or individual dessert bowls. Garnish with chopped pistachios and almonds to add a crunchy texture and a visually appealing touch.

You can serve Rabdi Badam Kheer chilled or at room temperature. It can be enjoyed as is or accompanied by some traditional Indian sweets like jalebi or gulab jamun.

Rabdi Badam Kheer is a luscious and comforting dessert that offers a delightful combination of creamy rice pudding, aromatic cardamom, and the richness of almonds. It is a treat that is sure to impress your family and friends during festive gatherings or any special occasion.
