Spiced Quinoa Ingredients 1 cup quinoa3 cups water or vegetable stock2 tbsp olive oil1 cup onion (finely diced)1 tsp ground coriander1/2 tsp salt1/4 tsp ground black pepper Mango Salsa 2 cups mangoes (peeled & chopped into 1 inch cubes)2 tbsp mint (chopped)2 tbsp scallion (chopped)2 tbsp cilantro (chopped)1 tbsp jalapeno, serrano or birds eye chillies (finely sliced)2 tbsp lime or lemon juice (I combined lime juice mango vinegar)1/2 tsp salt1/4 tsp chilli flakes Steps Add quinoa & water or vegetable stock into a pot on medium high heat.Cover, bring to a boil, lower heat to medium & cook till all the water has been absorbed.Set aside to cool (while still covered) then fluff with a fork.Meanwhile, add oil into a pan, when hot, add the rest of the ingredients & cook till onion starts to caramelise (stirring frequently)Pour spiced onion into cooked quinoa, stir well & taste to adjust seasoning.To make mango salsa, combine all the ingredients into a bowl (except mango), stir to combine & taste to adjust seasoning.Pour salsa dressing into cooled spiced quinoa, along with mango cubes, gently toss & chill in fridge until ready to serve.Garnish with fresh herbs, chilli flakes, lime zest & enjoy!
