Preheat the oven to 180C. Line a cake Tin with Grease paper2. In a bowl whisk together your flour, baking soda and cinnamon3. In a separate bowl combine together your oil, sugar and vanilla. Whisk together your eggs one by one.4. Combine the flour mixture in 3 parts to the wet mixture gently stirring. Then add in your walnuts and grated carrots ensuring it’s well distributed.5. Bake in the oven for 50 minutes at 180C until you’re able to pierce a toothpick and it comes out clean. Let it cool.6. For the frosting, In a bowl electric whisk your cream cheese, then add in your icing sugar and double cream for 3-4 minutes until it becomes fluffy. Optional: let it chill in the fridge for an hour.7. Once the cake has cooled, spread as much frosting on top, sift some cocoa powder and add your walnuts on top. Source : www.instagram.com
