Download ImageAyran Aşı ÇOrbaşı Ingredients1 cup grain of choice (wheat, rice, bulgur, quinoa, etc)1/2 cup chickpeas (optional)2 cups plain Turkish or Greek yoghurt (cold)3 cups water (cold)1 tsp dried mint1/2 tsp dried thyme or oregano1 tsp salt (to taste)1/4 tsp ground black pepper (to taste)Garnish\cucumbermint leaveschilli flakesextra virgin olive oillemon wedgesStepsSoak grains & chickpeas overnight (or ready boiled chickpeas)The next day, discard soaking water, rinse, add enough water & bring to a boil.Reduce heat & cook until they are soft (if using ready boiled chickpeas, add them 5 mins before grains are fully cooked)Remove from heat & let it cool down completely.Mix cold yoghurt with water, dried herbs, salt & pepper.Add the cooled grain & chickpea into the yoghurt mixture.Leave to cool in the refrigerator for at least 1 hr.When ready to serve, ladle into serving bowls, top with garnish, lemon wedges on the side & enjoy!
