Download ImageIngredients You’ll Need1.5 cup Medjool dates1/2 – 1 tsp sea salt2 cups pecans *approx.1 1/2 cups raw dark chocolate of choice1/2 tbsp coconut oilDirectionsIn a food processor, add dates (I usually soak mine in hot water for an hour or so before hand to soften) & a tiny bit of water if needed.Add the salt and pulse until a ball forms. If the caramel needs more salt, add a bit more.Once mixed, wrap the dough in a plastic wrap and place in the freezer for 1-2 hours (this makes the dough much easier to work with).To make the turtles, remove dough from freezer and roll into approx.2 inch balls and place on a parchment lined pan. Add 3 pecans to each ball and flatten a bit.To make the chocolate coating, melt chocolate & coconut oil over a double boiler or in a microwave safe dish.Once melted, spoon chocolate over each turtle until coated. Add an extra sprinkle of sea salt on top (optional, but come on, its salt).Once all turtles are coated, place in freezer to harden!
