Download ImageRoti Boyan (Bawean Bread) IngredientsPastry4 cups AP flour1 tsp salt1 cup warm water1 tbsp butter (cubed)Filling5 medium potatoes (cubed, boiled & roughly mashed)4 eggs (lightly beaten)1 tsp salt1/2 tsp ground white pepper1/2 cup parsley (chopped)1/2 cup scallion (chopped)1 tsp oil1/2 cup onion (diced)2 cloves garlic (minced)StepsIn the bowl of your stand mixer, combine flour & salt, add water (2 tbsp at a time) & mix on medium speed using a dough hook.Beat till it comes together into a ball (abt 5 mins) then add butter (cube by cube), mixing well after each addition.Once combined, cover & let it rest for 1 hr.Combine potatoes, eggs, salt, pepper & both herbs in a big bowl.Heat oil in a pan on medium, add garlic & onion, cook till onion turns translucent.Add potato mixture into pan, cook for 5 mins (stirring continuously), taste to adjust seasoning & set aside.Divide dough into 32 small balls, using a rolling pin, form each ball into thin discs (abt 5 inch in diameter).Place 1 heaped tbsp of filling in the center & cover with another disc.Crimp edges by pressing down with a fork or pleat by hand & continue to make more pastries.Heat sufficient oil in a pan & fry pastries in batches.When the underside has turned golden brown, flip & fry the other side.Transfer onto kitchen towel to remove excess oil & serve with sambal or chilli sauce.
