Roasted Asparagus With Burrata Ingredients 1 large bunch asparagus1 Tbs olive oilZest from 1 lemonJuice from 1⁄2 lemon1⁄2 tsp saltFresh ground pepper1/4 cup thick grated Parmesan cheese2 large balls burrata drainedPrepared balsamic glazeDried cherriesRoasted Pumpkin seeds Directions 1. Preheat oven to 400 degrees. Line a cookie sheet with parchment paper.2. Cut off bottom of woody stems of asparagus. Use peeler to peel bottom 1/2 of stem.3. Toss with olive oil, salt and pepper. Squeeze lemon half evenly over top.4. Lay out asparagus on cookie sheet in one layer. Sprinkle Parmesan on top. Roast 10 minutes.5. Place asparagus on serving platter. Cut or tear burrata into halves and place over asparagus. Sprinkle seeds, cherries and lemon zest evenly over all.6. Drizzle with balsamic glaze.
