Watch Video Ratatouille Ingredients * Vegetables :2 Medium Courgette (sliced)2 Sweet Potato (sliced)4 Large Tomatoes (sliced)Under Sauce :2 Tbsp Oil1 White Onion (diced)3 Garlic Cloves (minced)2 Red Bell Peppers (diced)600g Chopped Tomatoes (canned)1 Tbsp Salt1 Tbsp Pepper1 Tsp Chilli Flakes1 Tsp CuminTop Herb Sauce : 4 Tbsp Salted Butter2 Tbsp Olive Oil3 Garlic Cloves, minced1 Tsp Salt1 Tsp Pepper2 Tbsp Dried or Fresh Oregano3 Tbsp Dried or Fresh Basil Method 1. Pre-heat the oven to bake at 180C2. Under Sauce: over low-medium heat, mix together the oil with garlic and onion until fragrant. Then add in the diced pepper and chopped tomatoes with salt, pepper, cumin and chilli flakes. Let that simmer for 8 minutes until soft. Blitz it all together using a hand blender or a normal blender until it becomes a sauce like consistency3. Chop the courgette, sweet potatoes and tomatoes around 1mm thick.4. Place your sauce in the baking tray as this will be the base. Place your courgette slice, sweet potatoes slice and tomato slice as a pattern, repeat this process. You can do this in strips.5. Over low to medium heat, heat your olive oil, butter, garlic and herbs until fragrant. Reduce to low heat adding salt and pepper. Ensure all ingredients are well incorporated. Generously pour your herb sauce all over the top of your sliced veggies and brush the remaining sauce anywhere that’s missed a spot.6. Cover your baking tray with foil and bake to 25 minutes.
