Sprinkle with salt.In a shallow bowl, beat 2 eggs, 2 tbsp water & sprinkle w salt n pepper.in another plate combine the bread crumbs, Italian seasoning & garlic powder. Add the flour in another plate.Dip the eggplant slice in the flour, then it into the egg & then into the breadcrumbs.Spray the eggplant with oil & then place them in the airfryer at 1800C & air fry for 12-15 mins or until golden crispy flipping halfway through.
