Cover and refrigerate at least 30 minutes.3- Using a vegetable peeler, peel the carrots to get ribbons.4- Once the cream cheese mix is cool enough, remove from the plastic wrap and place on a serving plate.5- Place 2 carrot ribbons overlapping in the middle of the cheese ball. Place a dollop of cream cheese on top and place carrot ribbons, cut in half and folded, all around to form the top ribbon decoration.6- Finish with a red currant on top, serve with crackers. Enjoy!
