Download ImageBubur Sum Sum (Sum Sum Pudding) IngredientsPudding :150 g rice flour50 g corn starch200 ml coconut cream500 ml coconut water or plain water1/2 tsp salt2 pandan leaves (knotted) or 1/4 tsp pandan pasteSugar Syrup :150 g coconut palm sugar (gula Jawa or Melaka)50 g granulated sugar200 ml waterStepsAdd all the ingredients for the pudding into a pot over medium heat.Once mixture starts to boil, lower heat to low & keep stirring until it thickens & becomes fully cooked (abt 10 mins)Pour thickened flour mixture into silicone cupcake moulds or any heatproof container & chill in the fridge for at least 1 hr.Prepare syrup by adding all the ingredients into a saucepan on medium low heat & stirring continuously until all the sugar has dissolved & syrup thickens to desired consistency.Once pudding has set, remove from individual moulds or large container, cut into desired pieces or simply scoop into serving bowls & serve with sugar syrup poured over or on the side.
